Recipe: Paleo Snack Bites

I decided to do a (rare) recipe post today! I go through phases where I love/hate cooking... we've been meal planning lately and it's been enjoyable again. This is just a quick snack, but since many of my readers have young kids I thought it would be a good addition to this blog.

This is a direct adaptation of the No-Bake Energy Bites from Smashed Peas and Carrots. The original is quite tasty and very addictive! The kids loved them... well, we all did. But since we're (mostly) Paleo around here, I wanted to do a Paleo version so we can enjoy them with a little less guilt. Below is what I came up with - and they're just as good, I think!

PALEO SNACK BITES


  • 1 cup almond flour
  • 1/2 cup almond butter
  • 1/3 cup raw honey
  • 1 cup unsweetened coconut flakes
  • 1/2 cup flaxseed meal
  • 1/3 cup dark chocolate chips (the darker, the better)
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon extra virgin coconut oil


In a mixing bowl, combine all ingredients. You may need to scrape the sides of the bowl as you go.


Chill in the refrigerator for 1 hour. Then scoop by the tablespoonful and roll into balls. Enjoy!


Store in the refrigerator in an airtight container for up to 1 week (they don't last that long in our house). And you may find yourself making another batch very soon after because everyone is requesting them!
